PQ: What’s your food/wine philosophy?

FM: We like to offer fresh homestyle, healthy cooking at a good value for money.

PQ: One food you can’t live without?

FM: Crispy bacon.

PQ: One ingredient you can’t live without?

FM: Garlic.

PQ: What food/drink should people be more open to trying?

FM: Shellfish.

PQ: One food you avoided as a child and now love?

FM: Brussels sprouts.

PQ: Weirdest thing you’ve ever eaten?

FM: Sweet corn ice cream, in Thailand. It was disgusting!

PQ: Most memorable meal you’ve ever eaten?

FM: At the Trattoria, sitting at the bar overlooking the kitchen. It was a great experience and a wonderful atmosphere.

PQ: Exact moment you decided to become a cook?

FM: The opportunity to become the co-owner of Ingrid’s came up suddenly. I felt it would be a good challenge. It has also gotten me more tuned into Whistler’s future.

PQ: What’s your solution for a last minute meal?

FM: Pasta.

PQ: Best trend in food/restaurants?

FM: Fresh, healthy, good quality and well-priced food.

PQ: Worst trend in food/restaurants?

FM: Fast foods.

PQ: Greatest professional moment?

FM: Taking on Ingrid’s.

PQ: Where would you go to eat, if you could go anywhere in the world?

FM: Thailand.

PQ: Where would you go for your last meal in Whistler?

FM: Rimrock Café.

PQ: What brought you to Whistler?

FM: I came out on holiday to visit family and kept coming back. I eventually made it my home.
