After a lot of anticipation, the latest addition to Jack Evrensels Top Table Restaurant Group will open its doors on Dec. 15. Called Ouest, the 70-seat restaurant offers world class chefs and a contemporary French kitchen.
Returning to his Vancouver roots after eight years working with the finest chefs in London, England, Ouest Executive Chef David Hawksworth brings to Vancouver a wealth of skill and culinary experience. In London he was a protégé of chef Marco Pierre White, the first and youngest chef in the U.K. to receive three Michelin stars.
Hawkworth worked with White at The Canteen, and later held positions at Manior au Quat Saison in Oxford, The Square at Mayfair, LEscargot in Soho, and Isola in Knightbridge.
At Ouest, Hawksworth oversaw the construction of the kitchen, designing it to his specifications. He plans to combine traditional French cuisine with fresh local ingredients and seasonal variety.
Hawkworth has also hired a Executive Pastry Chef Thierry Busset, who also worked also worked for Chef White. Busset is well-known for his souflees and cakes.
The wine list was assembled by Ouest general manager and accredited sommelier Brian Hopkins (formerly of Araxi) and Araxi director of wines Chris Van Nus. The list offers an impressive selection of French wines and champagnes, plus a variety of new world and B.C. wines.
Like all Top Table restaurants, the décor of Ouest was designed by Vancouver architect Werner Forster. Ouest is described as warm, with leather walls, grey and white diamond-cut floors of Italian Carerra marble.
Ouest will be open for dinner from 6 p.m. to 11 p.m., Monday through Saturday. It will be closed on Christmas Eve and Christmas, and as of press time, was still available for a New Years Eve function. Visit Ouests website at www.ouestrestaurant.com or call (604) 738-8938.
